Description

Quebraditas Coffee Farm is a family-run project founded by Edinson Argote and Ángela Rojas in Oporapa, Huila. Together, they manage the Quebraditas Project, which includes the farms Quebraditas and Chorro Alto, with the vision of producing exceptional coffees while bringing recognition to one of Colombia's emerging coffee regions.

Located in the Colombian Macizo, the farms benefit from fertile volcanic soils, diverse microclimates, and ideal growing conditions for specialty coffee. The project cultivates traditional varieties such as Caturra and Colombia, while progressively expanding its portfolio of exotic cultivars including Geisha, Java, Bourbon Chiroso, Wush Wush, Sudan Rume, Pacamara, Arará, Eugenoides, Bourbon Pointu, Papayo, and Bourbon Ají.

Innovation is at the core of Quebraditas. Through controlled fermentations, thermal shock treatments, yeast inoculation, and experimental processing techniques, the team develops coffees with distinctive and reproducible sensory profiles. Their processing facility at Chorro Alto serves as the center for all post-harvest activities, where coffees are carefully fermented, dried, and prepared to achieve the highest quality standards.

Beyond coffee production, Edinson and Ángela are committed to supporting local producers and increasing the visibility of Oporapa on the global specialty coffee map. By collaborating with neighboring farmers, distributing seeds of rare varieties, and promoting transparent relationships throughout the supply chain, they are helping transform both the quality and reputation of coffee from the region.

The Quebraditas Project represents a combination of innovation, sustainability, and community development, producing coffees that showcase the unique potential of Huila while creating lasting opportunities for local coffee-growing families.

Processing

1. Harvesting: The cherries are picked ensuring a minimum of 80% ripe cherries.
2. Floating: This step removes unripe, overripe, and dry cherries.
3. Processing: Double fermentation is applied. The initial fermentation lasts 72 hours, followed by drying for 12 days until the coffee reaches 20% moisture content. It is then rehydrated for 4 days using specific yeast.
4. Drying: After the second fermentation, the coffee is dried for 76 hours at an average temperature of 40°C.
5. Stabilization: The coffee is stabilized in grainpro bags.
