Description

Before 2015, Finca Monteverde was known as Florestales II (coffee farm) and La Primavera (cattle farm). In 1941, Alejandrino Gutiérrez bought the land and moved his family to Herrera, Tolima, seeking fertile highlands for farming. Over the years, his sons Óscar and Jorge acquired the properties, with Óscar eventually owning both by 1966.

In 1988, Óscar passed the coffee farm to his son Gildardo and his wife Miralba, who continued cultivating coffee. Their children—Johan, Newerley, and Katerinne—became fifth-generation coffee producers, introducing exotic varieties in 2010. Today, Johan manages farm operations, Newerley specializes in business and coffee grading, and Katerinne oversees marketing and international sales.

Blue Natural Process

Fermentation: The cherries undergo 24 hours of oxidation at controlled temperatures without being submerged in tow or fibers. If temperatures exceed 35°C, cold water baths are applied to regulate fermentation. The cherries are then placed in plastic bins with hermetic closures and a valve system, allowing gases to escape while preventing air entry for anaerobic fermentation. They remain submerged for 48 hours, inoculated with farm-specific microorganisms and yeasts sourced from the upper, untouched areas of Monteverde, particularly Los Robles—bringing the total fermentation time to 72 hours.

Drying: The cherries are dried using a solar system over 20 days.
