The Arcila family has shaped Colombian coffee for over eight decades. Since 2015, they’ve leaned into innovation, exploring bold fermentation techniques to push flavor boundaries. Jairo Arcila is at the forefront of this movement — and this latest lot is a perfect example of his creative mastery.
Fermentation, Reimagined
After careful hand-picking at peak ripeness, the coffee cherries are pulped and placed in sealed plastic bags to undergo extended anaerobic fermentation. But here’s the twist: the fermentation happens with honey and dried lychee, giving the coffee an unmistakable fruity intensity and a deliciously wild edge.
What It Tastes Like
This cup is vibrant and unexpected. It bursts with tropical lychee, juicy peach, and tart passionfruit, rounded out by hints of strawberry kiwi. A bold coffee that rewards curiosity and excites the palate.

Peach maceration -  Experimental processing where coffee cherries were fermented for 72 hours together with peaches and wine yeast.
